Our
Story
From the copper cauldrons of Michoacán to the heart of Tennessee.
Tradition Meets Tennessee
Las Carnitas was born from a simple idea: bring the authentic flavors of Michoacán to Clarksville, Tennessee. No shortcuts. No compromises. Just real carnitas made the way they've been made for generations.
Our carnitas are slow-cooked in traditional copper cauldrons, rendered in their own fat until they're perfectly crispy on the outside and impossibly tender inside. It's a process that takes time, patience, and respect for tradition.
We source quality ingredients and prepare everything fresh daily. From our handmade tortillas to our house-made salsas, every element is crafted with care.

The Carnitas Process
Copper Cauldrons
Traditional cazos de cobre conduct heat evenly, creating the perfect environment for slow-cooking pork to perfection.
Slow Rendered
Hours of patient cooking in pork fat breaks down connective tissue while crisping the exterior to golden perfection.
Simple Seasoning
Salt, citrus, and time. The best carnitas don't need complicated spice blends—just quality pork and proper technique.
Come Taste the Difference
Words only go so far. The real proof is in the carnitas.
